Vegetarian chickpea burger with polenta.

Yesterday was surprised to see a Spanish television program explaining how to make a chickpeas burger with polenta. I’m not very fond of television. So I looked if the program had a website. Yes,  they did and also had more vegetarian hamburgers recipes.
The presenter of the program is called Karlos Arguiñano which is a great cook with extensive experience in the kitchen and in the implementation of programs of this style. I loved the way he explain recipe . He did it in a fun, very clear to you to understand everything very well.

Ingredients (4 people):

400 gr. chickpeas (cooked)
150 gr. polenta
1 onion grated
1 carrot, grated
1 endive
300 ml. water
vinegar
extra virgin olive oil
salt
2 tablespoons white sesame
parsley
Preparation

1-After cooking the chickpeas,spend the beans through the food mill. Reserve the puree.

2-Boil water with a pinch of salt. Bring to the boil and add the polenta begins to thicken when added hummus. Stir in grated carrot and onion. Mix well and cook for 3-4 minutes set, stirring. Put a pinch of salt.

3-Toast the sesame seeds in a pan and add the chopped parsley. Reserve the mixture.

4-Spread the mixture on a platter and let stand 1 hour to harden. Unmold and 12 burgers out using a pasta cutter (with the leftovers can make croquettes).

5-Fry the burgers in a pan with very little oil. Serve chickpea patties served with polenta and endive salad seasoned with salt, oil and vinegar. Sprinkle the dish with the mixture of sesame and parsley (if desired garnish with a parsley leaf).
